Vegan Holidays: Day Two!

"On the Second Day of Chirstmas, my True Love BAKED for me...A Vegan Chocolate Covered BERRRYYYY"
So, on DAY TWO of this Vegan Holiday Extravaganza, I have a great recipe for the sweet teeth out there...
This one is SIMPLE.
The BEST thing to do is visit a local farmer's market to get any berries or fruit that are in season (check out this sight for local farmers markets:

Dice, slice, and cut fruit up into bite size pieces. Melt Vegan Chocolate Chips (locally, you can find them at Whole Foods and Fry's Signature store in the healthy food baking section at Daisy Mountain and Gavilan Peak in Anthem). Drizzle the chocolate on the fruit and place in the fridge for a few minutes. Sprinkle with half a TBS of Stevia for a little sweetness kick!
The chocolate will harden a bit and makes the juices of the fruit cause a tastebud explosion!

Vegan Holidays: Day One!

In celebration of the holidays that are quickly apporoaching, I will be posting a VEGAN version of some of the traditional favorites this time of year as well as some unique addition to the classics.
Sweet Potato Casserole topped with Pralines
Sweet Potato Casserole:
4 cups cooked, mashed sweet potatoes or yams
1/3 cup fresh squeezed orange juice
1/4 cup brown sugar (or stevia for less calories)
3 tablespoons melted vegan margarine (Earth's Best is a great brand)
1 teaspoon grated orange peel, or more to taste (use organic!)
1 teaspoon sea salt
1/2 teaspoon organic cinnamon
1/2 teaspoon ground ginger (or 1 tablespoon if freshly grated)
1/4 teaspoon allspice
1/8 teaspoon pepper
Praline Topping:
1/3 cup brown sugar (or stevia)
1/2 cup chopped pecans
1/2 teaspoon cinnamon

Bahamas Inspired Vegan Cupcakes.

Many of you may watch "Cupcake Wars". I watched the show a few times and happened to watch a season in which a Vegan Cupcake won the competition! Vegans are making their mark in the culinary world...watch out!
There are many great recipes for Vegan cupcakes, but I came up with this one recently and fell in love with it (once I finally got it right!).
My inspiration? I went to the Bahamas on an all-expense paid trip (yea, AWESOME!) and the food was absolutely amazing (and very accomodating to those of us who are particular in the sort of food in which we fuel ourselves). If you have a sweet tooth and want to remain sweet to animals and the environment, check these out! (warning...this recipe is like Viagara for the taste buds!!!!)
Not only do these taste AMAZING, they have awesome health benefits from the coconut oil to the herbal detox tea added. Good for the heart, the kidneys, and the liver. Perhaps it should be dubbed the perfect hangover cupcke cure? Try them...

Quinoa Timbales

QUINOA TIMBALES
Ingredients (buy local and organic as often as possible)
2 cups steamed Red Quinoa (I use a rice steamer)
1 Tbs Extra Virgin Olive Oil
1 cup diced Monterrey Baby Bella Mushrooms
1/2 cup diced Vidalia Onion
1/2 cup diced Sweet Bell Peppers (red, orange, and yellow are awesome!)
3 Tbs sundried or fresh cherry Tomatoes
1 cup soaked, rinsed, then steamed Black Beans
1 Tbs chopped fresh Basil
8 spearhead cuts of steamed Asparagus
2 Tbs roasted sunflower seeds (no salt)
Once you have Quinoa steamed, add all other fresh chopped ingredients (except asparagus) and mix. The most exciting part of this dish is mixing everything together and then putting the ingredients into a ramekin dish to make the timbales. Kids LOVE to do this too! Once you pack the mixture into a ramekin dish, flip it over onto a plate and slowly (while slightly twisting) pull the dish off and VOILA! Top the timbales with asparagus spears....

I'm Robyn Flores. My daughter came up with "Steezy Vegan" which, I know, sounds like "sleazy" or "squeezy" or even "sneezy". But, she insists that it stands for "Stylish and Easy". Logic of a nine year old...brilliant.
